Nothing Bundt Cakes!

My bestie lives in North Carolina and over the years I have heard her talk about this place called Nothing Bundt Cakes. At her work it was the chosen place to buy cakes for their Birthday celebrations.

About a week ago I heard there was a Nothing Bundt Cakes that opened in Coral Springs. Today was my hubby’s birthday, so I figured no time better than today to give it a try. I live about 30 mins from the store, but it was worth the drive!

The shop is really cutely decorated. They have all their different cake options in the window and you tell them what you want and then they pull the product from the back of the store.

They have Bundlets ($3.95) which are a good 2 person size cake. Then they have an 8″ (starting at $19.95) and 10″ (starting at 29.50) cake that you can serve up to 20 people (for the larger size). They also have little personal size cakes (think cupcake size) called Bundtinis ($19.50 for a dozen). These you order by the dozen and they give you an assortment of flavors.

I can’t eat a lot of sweets, but I had to taste these cakes. We got the Red Velvet and Chocolate Chocolate Chip flavors. We all agreed the Red Velvet was out of this world, but the Chocolate Chocolate Chip was really good as well. There are chocolate chips throughout that are still hard and not melted. Next time we want to try the lemon cake and the carrot cake flavors.

The most noticeable thing about these cakes is they are extremely moist. The frosting seems light, but we were surprised to find that the center of the cake was full of frosting as well. I didn’t eat much of the frosting, but from what I did have, it was super sweet. If you are a frosting lover, you will be in Heaven!

The Coral Springs location (1949 N. University Drive, Coral Springs, 33071) is having their Grand Opening Family Day on July 15th from 10am-2pm. The first 50 people will receive free Bundlets for a year (one a month). They will also have fun stuff for the kids…face painting, etc.

Beehive Kitchen

A few weeks back I had lunch at a new place in Fort Lauderdale called “Sushi 4 Fun” and when I left I walked past this new restaurant called “Beehive.” They were under construction and in their window was a sign saying to email them with the words “can’t wait” and they will email you a $20 gift card when they open.

Sure enough, this week I received my gift card. I was super excited to try it and headed there today with one of my good friends. We got there right before the lunch rush and were able to get our food and grab a seat before it got crazy. It seems the new craze is fast food restaurants that allow you to build a bowl with fresh, healthy ingredients. Beehive is exactly that. You can choose between two bowls: Small Bowl or Large Bowl. The small bowl comes with one base, 2 Veggies, 1 protein and 1 sauce. The large bowl comes with 2 bases, 2 veggies, 2 proteins and 1 sauce. They also have a variety of special menu bowls where they have already done the paring for you…Like the “East meets West” bowl: whole grain brown rice, sweet potato glass noodles, szechuan green beans, ahi tuna poke, citrus marinated avocado, thai coconut curry. I have eaten at a place like this before (Bolay in Boca) so I was aware that you can usually trade in one or all of your bases for a veg. I’m not to excited about lettuce and I don’t eat grains for the most part. So I choose to trade in one of my bases and got three veggies instead. This is what I had on my bowl:

Base:

  • Roasted Sweet Potatoes

Veggies:

  • Parmesan Roasted Brocoli
  • Wok Seared Mushrooms
  • Roasted Brussel Sprouts

Protein:

  • Baked Almond Crusted Chicken
  • Rustic Herb Grilled Chicken

Sauce:

  • Roasted Red Pepper Sauce

It was SO good and very filling. I could only eat half it. Maybe next time I’ll go for the small bowl instead. I really enjoyed the Almond Crusted Chicken and dipped it in the super yummy Roasted Red Pepper Sauce. The veggies were fresh and cooked perfectly. Overall, really impressed. I can’t wait to go back!
